Festive Gingerbread Cookies

Ingredients:

Cookies

125g butter, room temp
100g brown sugar
175g golden syrup
1 egg
315g plain flour, extra for dusting
1 tbsp ground ginger
1tsp mixed spice
1 tsp baking soda








Icing

500g icing sugar
60ml water (may not need all)
Gel food colouring of your choice
Smarties and Jelly Tots for buttons/noses
Edible Glitter


Directions:

Pre-heat your oven to 170 degrees celsius (350F) and line several baking trays with baking parchment.
Cream together to brown sugar and butter until pale, smooth and yummy :)



Next, crack the egg into the mixture making sure to be careful of any rogue shell and stir together.


Pour in the golden syrup gradually whilst stirring until combined.



Sift in your dry ingredients (flour, spices and baking soda) and bring together into a ball. You may need to add more flour depending on how wet the mixture is, just make sure it has stopped sticking to the sides and you're done.



Cover with cling film and put in the fridge to cool for at least 30 minutes. When cold, roll out onto a well floured surface until about 1-1.5cm thick. Dust your cutters with flour and cut you shapes very gently so as not to break the dough. Transfer to the baking trays and bake for about 8 minutes, checking regularly as all ovens differ. They will spread a bit (depending on how long you cooled for) so make sure they have room around them.


Once baked and golden, allow to cool COMPLETELY. I did not do this and so as you can see below, my icing split over the edges! 
Mix your icing until it just becomes runny, otherwise is will act like mine. Separate into bowls and add the food colouring until you reach your desired shade.


To decorate, you can use a knife to spread the icing, but for more detail like my snowflake cookies, use piping bags. For the reindeer, pipe an outline and allow to dry, then flood the shape. Add 3 drops of icing on the men to glue the buttons on and add eyes. 


Add as much glitter and sweets as you'd like and you're done :) The best time to add decorations is when the icing gets a bit sticky, that way they don't slip and slide everywhere!


Myself and my family thoroughly enjoyed these little treats and devoured them within the week! The ginger and spice are so Christmassy and warming and the icing balances the tastes nicely. Perfect with a cup of tea or hot chocolate on a chilly day, cuddled up with a book!
