Ingredients:
Cupcakes
. 115g unsalted butter, slightly melted
. 135g dark brown sugar
. 65g granulated sugar
. 2 large eggs, at room temp
. 80ml milk
. 2 teaspoons vanilla extract
. 190g plain flour
. 1 teaspoon baking soda
. 1/4 teaspoon bicarbonate of soda
. 1/2 teaspoon salt
. 1 teaspoon cinnamon
. 1/4 teaspoon ground nutmeg
. 1 1/2 medium apples
Icing
. 9 oz cream cheese
. 175-200g icing sugar (more for thicker consistency)
. 2 teaspoons cinnamon
. 2 teaspoons cinnamon
First, preheat your oven to 170 degrees celsius. This recipe makes about 14-16 cupcakes in total, so you'll need to line one full cupcake tray and then just the middle row of another. I chose to use some yellow and orange cases because they give me very autumnal vibes :)
Next, mix the butter, brown sugar and granulated sugar in a large bowl until smooth. Add the eggs one at a time - being careful not to crack any shell into the mixture! - and then the milk and vanilla extract.
Take a sieve and rest in on the rim of the bowl and pour the flour, bicarb of soda, baking powder, salt, cinnamon and nutmeg in. Little at a time, tap the sieve and stir the mixture until combined. Fold in the apples (and lick the spoon).
Using spoons or preferably an ice cream scooper, transfer the mix to the prepared trays and bake for 20 mins or until a fork inserted in the centre comes out clean.
Now this part is VERY important! You must wait until the cupcakes are completely cooled before beginning to ice them or the icing will melt off.
While they are cooling, add the cream cheese, icing sugar and cinnamon into a bowl and whisk until smooth. If you want to make the consistency thicker so you can pipe it, add more icing sugar until you get what you desire. Ice the cakes and then decorate as you please. I chose some cute little golden star sprinkles to fit my theme and I was done!
Now, I'm not a pro baker (as you can probably see from the pics) but these turned out so yummy, no matter what they look like! The apple makes them super moist and the spices sent me into a cosy coma, not to mention they are light and fluffy (if I do say so myself). These are perfect for this time of year when you just want to curl up in a warm blanket with a cup of tea and a book. My family has not complained either, I know they'll be gone within a few days!
